There are certain things I just have to plan in advance...the weekly meal plan is one of them! My new career as a full-time Nanny and homeschool teacher involves making the weekly meals - and between ensuring we have all the ingredients and needing to prep parts of meals in advance, it only hurts me to be last minute in this process.
Sometimes I over-think the plan, but not this week. I relied on flavors I was craving and ingredients I know I have in the house. Hopefully this plan, or parts of it, will save you from some of the decision fatigue I am so often plagued with! Happy Eating!
Monday: Fish Cakes over Farro Salad (food processor for the win!)
**a note on the salad! I wasn't a huge fan of the dressing - if you do choose to use it, perhaps use it sparingly! I also think a simple balsamic and oil combo would be really nice!
Tuesday: Mexican Quiche - I'm having dinner with a friend but it's taco Tuesday - what better way to ensure the household gets their Mexican cuisine fix?
Wednesday: Fig, Prosuitto and Arugula Salad - I have everything for this delicious salad already, minus the figs, which I will be ordering from the store today.
Thursday: Chickpea Stew - My brother made this a few weeks back, and I happened to show up at the perfect time to steal a taste from the pot. It was so flavorful and comforting!
